From a cake sheet, pre-cut discs are used as base. ‘Tin-baked’ cakes are cut horizontally into sheets.
The cake base runs through the TFT gateaux & finishing line. Filling will be deposited onto the cake. This process is repeated for multiple layer cakes. Both moulded products (bavarois, mousse cakes) and non-moulded products (flan-like) can be handled. After the blast freezer to ‘skin’ the outside the final decoration is done to conclude with the final freezer.
